Known for its bold umami flavor, delectable texture, shiitakes also contain healthy amino acids and other healthy compounds and fiber. We like to put Shiitakes in stews, stir-fry dishes, soups, and even use it as a meat substitute. To rehydrate the mushrooms, simply rinse, prepare hot water, and let mushrooms soak until soft. Save the water to use as a mushroom stock. We prefer to remove the stems, but others prefer the chewy texture.
